Ages ago, in cricket lifespans, I married a man who was half Danish. I don’t remember when my mom-in-law gave me my first AEbleskiver pan, but I do remember her teaching me how to make these treats. The key is butter. Lots and lots of butter. And aside from the special pan (sorry, but you must invest in the special pan), you’ll need a knitting needle to turn the doughnuts. The knitting needle is key.

My recipe comes from a book (self-published in the 70s maybe?) called Delectably Danish: Recipes and Reflections by Julie Jensen McDonald. She collected recipes from Danes throughout the U.S. This one comes from Hulda Sorenson, and I've added my comments IN ALL CAPS.
Ingredients:
2 cups flour
½ tsp. salt
1 tsp. sugar
2 cups buttermilk

2 eggs, separated YOU DO NOT NEED TO SEPARATE THE EGGS AT ALL, BUT DOING SO WILL MAKE YOU FEEL MORE LIKE A PRO-CHEF.
1 tsp. baking soda
melted butter
jelly or applesauce YOU NEED STRAWBERRY JAM! PREFERABLY JAM FROM DENMARK WHICH YOU CAN SOMETIMES FIND AT TRADER JOE'S.

| Then again until the dough is cooked on all sides. Check to make sure they're not doughy in the middle because biting into raw batter is gross. |

Mix flour, salt and sugar. Beat together the buttermilk and egg yolks, and add the flour mixture. Add soda and fold in stiffly beaten egg whites. Heat the pan and put melted butter in each hole AT LEAST A TEASPOON. Pour batter into holes, but do not quite fill them. I FILL THEM. Place over low heat BUT NOT TOO LOW. Serve hot with jelly or applesauce. SERVE HOT WITH A DOLLOP OF STRAWBERRY JAM AND A SPOONFUL OF POWDERED SUGAR.

LOL My mom made these yesterday! So tricksy... I admire your courage!
Me? I made white trash aebelskivers this morning: heat oil, open two cans of biscuits, punch out holes in biscuits, fry "donuts," toss in powdered sugar.
Appropriately enough, one of the boys had to jump up to feed the chickens mid-breakfast.
All I need is a truck up on blocks in my front yard, and I'll feel perfectly at home.
Well, and maybe a roll of rusty barbed wire, too.
